Sahlab Pudding

Sahlab Pudding is the best thing on a cold day. I grew up in Denver, Colorado. So the snow was normal. It was always expected, not always welcomed. On the first few snow days of the season, we’d welcome it with excitement and stay home next to the fireplace. We’d play games, and take advantage of being snowed in.

My favorite thing to have on snow days was Sahlab Pudding. It’s the perfect warm, creamy pudding with the slightest hint of mastic. Top it with unsweetened fine coconut and ground cinnamon, and the flavor profile is out of this world. Give me Sahlab or some good Chocolate Chip Cookies on a cold day, and I’m set.

I used to beg my mama to make it for me, but she was always busy with other things so I would be responsible to stir it. She would pour all the ingredients at once, and I had the responsibility of whisking it for 15-20 minutes on low heat so it would thicken. I would always feel so accomplished. Now, I can’t wait till my daughter is old enough to make those memories too. Family recipes always have the best memories.

Now, I’ve found an easier way to make it. I warm the milk and sugar and then add the dissolved cornstarch. This cuts your whisking time way down. You may not get an arm workout, but you’ll definitely get a perfect snow day (or any day!) warm dessert that won’t disappoint. Make it for your family! Don’t forget to tag me and share. This warm Sahlab is better than cocoa on a cold day. Perfectly sweet, creamy, and topped with coconut and cinnamon. Just like mama used to make it.

Ingredients

Units Scale

6 cups Milk

3/4 cup Sugar

3/4 cup Cornstarch

3/4 cup Cold Milk

1/4 tsp Ground Mastic

Coconut Flakes

Ground Cinnamon

Instructions

Mix the milk and sugar. Bring to a boil on low heat.

Dissolve the cornstarch in the 3/4 cup COLD milk. While whisking continuously, add the mixture to the boiled milk. Allow boiling for 3 minutes on a low simmer while whisking.

Using a mortar and pestle sprinkle a dash of sugar onto the mastic and grind it. This will keep it from getting gummy. Mix into the sahlab.

Pour into serving cups and top with desired toppings. We enjoy coconut and ground cinnamon. Enjoy!

Notes

This can be made ahead and eaten cold, or you can microwave it to reheat.
