I knew I had to recreate it at home—but I also wanted to make it even better. After plenty of testing, I landed on a version that’s unbelievably smooth, rich, and creamy without ever tasting eggy. The addition of heavy cream gives it an incredibly silky texture, while a gentle water bath ensures it bakes up perfectly every time.

Tips for the Perfect Homemade Flan
- Don’t let the caramel get too dark. Once it reaches a deep amber color, remove it from the heat immediately. Caramel continues cooking from the residual heat and can quickly become bitter if overcooked.
- Strain the custard. Pouring the mixture through a fine-mesh sieve removes any bits of cooked egg or foam, giving your flan an incredibly smooth, silky texture. Do this at least three times.
- Skim the foam with plastic wrap. Before straining the custard, gently press a piece of plastic wrap directly onto the surface, then peel it off in one quick motion. It will lift away most of the foam, giving you an even smoother, more beautiful flan.
- Use a water bath. Baking the flan in a hot water bath helps it cook gently and evenly, preventing curdling and creating a creamy custard.
- Don’t overbake. The center should still have a slight wet jiggle when you remove it from the oven. It will continue to set as it cools.
- Cool completely before refrigerating. Let the flan cool to room temperature before transferring it to the refrigerator to finish setting.
- Chill overnight if possible. While a few hours will work, an overnight chill allows the caramel to fully liquefy and the flavors to develop for the best texture and taste.
- Run a thin knife around the edge before unmolding. This helps release the flan cleanly without tearing the custard.
- Warm the bottom of the pan before unmolding. Place the flan pan over low heat on the stovetop for 15–30 seconds, just until the caramel begins to loosen. This melts any caramel that has hardened, making it much easier to release the flan cleanly.
- Invert with confidence. Place your serving plate over the mold and flip it in one quick, confident motion to keep the flan intact.
Easy Homemade Flan Recipe
This homemade flan recipe is rich, silky, and topped with a deep amber caramel sauce. Made with sweetened condensed milk, evaporated milk, heavy cream, and extra egg yolks, it bakes into an ultra-creamy custard that’s never eggy. Perfect for holidays, dinner parties, or whenever you’re craving a classic crème caramel.
Ingredients
CARAMEL
1 cup Sugar
FLAN
3 Whole Eggs
5 Egg Yolks
1 tbsp Vanilla Bean Paste
1 14 oz can Sweetened Condensed Milk
1 12 oz Can Evaporated Milk
1 1/4 cup Heavy Cream
1/4 cup Sugar
1/2 tsp Salt
Instructions
Prepare the caramel. In a medium saucepan, heat the granulated sugar over medium heat. As it begins to melt, gently swirl the pan occasionally until the sugar turns a deep amber color. Remove it from the heat immediately to prevent the caramel from becoming bitter.
Coat the mold. Carefully pour the hot caramel into your flan mold or baking dish, swirling it around the bottom to evenly coat it before it hardens. Set aside while you prepare the custard.
Make the custard. In a large bowl, combine the sweetened condensed milk, evaporated milk, heavy cream, whole eggs, egg yolks, vanilla extract, and salt. Blend with an immersion blender just until smooth and fully incorporated. Avoid over-blending, as you want to introduce as little air as possible. Once mixed, gently bang the bowl on the counter a few times to bring any air bubbles to the surface.
Remove the foam and strain. Press a piece of plastic wrap directly onto the surface of the custard, then peel it away in one quick motion to lift off most of the foam. Slowly strain the custard through a fine-mesh sieve into a large measuring cup or bowl with a pour spout. For the smoothest, silkiest flan, I like to strain the mixture three times.
Fill the mold. Slowly pour the strained custard over the hardened caramel.
Prepare the water bath. Place the flan mold inside a large roasting pan. Cover the mold tightly with foil, making sure the foil doesn’t touch the surface of the custard. Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the flan mold.
Bake. Bake at 300°F until the edges are set but the center still has a slight wet jiggle when gently shaken. The flan will continue to set as it cools. Depending on your oven and the size of your pan, this usually takes 50–75 minutes.
Cool. Carefully remove the flan from the water bath and let it cool completely to room temperature.
Chill. Cover and refrigerate for at least 6 hours, preferably overnight. This allows the custard to fully set and gives the caramel time to become beautifully smooth and pourable.
Unmold and serve. Before inverting, place the flan mold over low heat on the stovetop for 15–30 seconds to loosen any caramel that has hardened. Run a thin knife around the edge of the flan. Place your serving platter over the mold and quickly invert it. Lift the mold away slowly, allowing the caramel to cascade over the flan before slicing and serving.

Storage
Store leftover flan covered in the refrigerator for up to 5 days. I like to keep it in the original mold until I’m ready to serve it, as the caramel helps keep the custard moist. If you’ve already unmolded it, transfer any leftovers to an airtight container and spoon the caramel sauce over the top to prevent it from drying out.
Freezing
Flan can be frozen, although the texture may become slightly less silky after thawing. To freeze, wrap the flan tightly in plastic wrap followed by a layer of aluminum foil, or store individual slices in an airtight freezer-safe container. Freeze for up to 2 months.
To serve, thaw overnight in the refrigerator. Keep in mind that the caramel sauce may become thinner after thawing, but the flavor will still be delicious.
Frequently Asked Questions
Why is my flan still jiggly?
A slight wet jiggle in the center is exactly what you’re looking for. The flan will continue to set as it cools and chills. If it’s completely liquid in the center, it likely needs more baking time.
Why did my flan crack?
Cracks are usually caused by overbaking or baking at too high of a temperature. A gentle water bath and removing the flan while the center still has a slight jiggle will help prevent cracks.
Why does my flan have bubbles?
Too much air in the custard is the most common cause. Blend only until the ingredients are combined, tap the bowl on the counter to release air bubbles, remove the foam with plastic wrap, and strain the mixture before baking.
Why won’t my flan release from the pan?

Why do I strain the custard three times?

Can I make this flan without heavy cream?
You can substitute additional evaporated milk or whole milk, but the finished flan won’t be quite as rich or creamy. I recommend using heavy cream for the best texture.
How do I know when flan is done?
The best way to tell if your flan is done is to gently jiggle the pan. The edges should be set, while the center should still have a slight wet jiggle—similar to Jell-O. It should not be completely firm in the oven, as it will continue to cook from the residual heat and finish setting as it cools and chills in the refrigerator.
If you’re using an instant-read thermometer, the center of the flan should register 175–180°F (79–82°C). Avoid overbaking, as this can lead to a rubbery or eggy texture instead of the smooth, silky custard you’re looking for.

Okay so I also am a person that absolutely hates eggy tasting things, eggs in general are not my favorite. But this flan is so incredibly delicious. I didn’t have heavy cream so I used half and half and it was so creamy! I was actually surprised by the texture at first, I didn’t expect it to be that smooth but also very thick. I loved it! Amazing flavor and very easy instructions.

I have never made flan before but it’s my favorite dessert so I tried this recipe only I didn’t have condensed milk so I made it with a can of evaporated and 1 and 1/4 cup of sugar. Then For the evaporated milk I used half cup of cream and half cup of whole milk. The rest it the recipe I kept the same and it literally came out PERFECT. I think because of the type of dish I was using (soufflé pan) and a glass pan for the water bath it took so long. Almost 3 hours to get to the jello consistency before I took it out lol but honestly it was perfect. So smooth and creamy. I’m amazed at how well it ended up since I usually botch my water baths anyway this one is def a keeper!

You have managed to bless me with the recipe I’ve been looking for for YEARS, if not actual decades, that comes the closest to achieving the perfection of flan when a custard flirts with a pudding and makes for a treat that holds body, yet feels like it is melting in your mouth when you have bite after bite. Topping it with fresh whipped cream from a whisk or stand mixer, albeit canned will do just fine, and finished with a maraschino or luxardo cherry takes perfection to divinity.
