Croissants are probably my absolute favorite bread. They taste good with anything. I love making lunch sandwiches in them. They taste great with just jam. They’re absolutely amazing as french toast. Literally anything in a croissant is just better. I can even enjoy them just plain. But my absolute favorite way to eat a croissant, is to have an old one. And I don’t mean a dry old crispy croissant. I mean an almond croissant. I mean a dry croissant stuffed with the best homemade almond frangipane, baked to perfection and topped with toasty almonds. It’s no longer a dry croissant. it becomes the most amazing breakfast almond croissant you have ever had.
I discovered almond croissants at Central Market a few years ago. At the time, I would go to Central Market after a physical therapy session to get a cup of coffee. I slowly became obsessed with their croissants. I used to go in at 4pm just to get them fresh. They were absolutely amazing. One day, the baker told me that they used all the old croissants to make them because that’s what made them so amazing. I was shocked.
So now, instead of buying bananas and waiting for them to get old so I can make Banana Muffins or Banana Bread, I buy croissants and wait for them to get old so I can make these amazing Almond Croissants. I’ve had them at many places. Starbucks recently started carrying them as well. Now, I may be biased, but none of the Almond Croissants I have had are as good as these homemade easy almond croissants. They take five minutes to make, so they’re so easy. They bake in ten minutes, so they’re so fast. And they use up all your old dry croissants, so they’re extra convenient. Make them today. I promise you will not regret it.
Easy Almond Croissants
Never throw out a dry croissant again! Instead make this easy frangipane and stuff them with it. Top them with a little more, and add some toasted almonds. Best. Breakfast. Ever.

Ingredients
6–8 Croissants
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup ground almonds or almond meal
1 tbsp flour
1/2 cup slivered almonds, for topping
Powdered Sugar
Instructions
Preheat your oven to 375 F.
Beat sugar and butter until creamy.
Add the eggs, and beat till fluffy.
Add the ground almonds or almond meal, flour, and extract. Beat until combined.
On a sheet pan, split the croissants horizontally. Spoon 2-3 tbsp of the mixture and spread evenly into each croissant.
Top the croissants by spreading a tbsp of the frangipane on top, then sprinkling with slivered almonds.
Bake for 10-12 minutes, until the croissants are crispy and the almonds are slightly toasted.
Cool completely and then sprinkle with powdered sugar. Enjoy!
Notes
You can make almond meal in a food processor by blending up 1 cup fresh almonds. Just add them to the food processor and process until you have fine crumbs. You can add a spoon of sugar to prevent them from turning creamy.
You can substitute the almond extract with 1 tbsp pf vanilla extract if the almond flavor is too strong for you. Almond extract is very potent.

I made these for a Birthday breakfast for my husband who is an almond croissant fanatic and very picky about how he likes them. He LOVED the results and I was so happy because the recipe was so easy to follow. I wasn’t able to find almond extract so I used the vanilla instead and it was still so yummy.
