
I am absolutely obsessed with Pina Coladas. The creamy coconut and sweet pineapple combination is a match made in heaven. They are traditionally made with alcohol, which we don’t drink. Most places have no problem making virgin one’s for you, but honestly it’s just so much better at home. The restaurant ones are typically frozen drinks blended with some sweeteners. This is the real deal. Keep this and my Mint Lemonade on your drink rotation this summer. You won’t regret it!
Fresh frozen pineapple, cream of coconut, and lots of pineapple juice makes this not only the most delicious drink, but the easiest to make. You want to use frozen pineapple because it’s going to make it super creamy and keep that pineapple flavor strong. You don’t want a watered down pina colada. The cream of coconut is so rich and creamy and doesn’t taste like the lotiony flavored frozen drinks. I also like add ice to balance the sweetness and make it a frozen drink to enjoy on a hot summer day. Feel free to adjust to your liking.
You can purchase the cream of coconut from Kroger, walmart, or your local grocery store. You will typically find it with the drink mixes. The pineapple juice is usually there too!

Ingredients
20 oz Frozen Pineapple
6 Cups Pineapple Juice, or 46 oz Can
15 oz Cream of Coconut
2 Cups Ice
Maraschino Cherries, for topping
Instructions
Blend everything but the cherries together until nice and smooth. Top with a cherry or two and enjoy.
Feel free to halve the recipe if you need too. Store any unused cream of coconut or pineapple juice in a closed container in the fridge for up to two weeks.
