I’ve got this thing for arugula. I absolutely love the peppery kick to it. It makes a great add-in to salads, and I’m obsessed with it in sandwiches. My mom makes this amazing arugula salad that is just out of this world. Every time I go visit home I beg her to make it. Everyone in my family loves it so much that it has pretty much become a staple with ever dinner. It’s just balanced so perfectly. The arugula has this crisp crunch with a little bit of spice to it. The cherry tomatoes add the perfect coolness with just a hint of sweet. Then you have the crunchy earthy walnuts and the little slivers of red onion for a little pungent kick. You top all that off with a vinaigrette made with olive oil, salt, lemon juice, Pomegranate Molasses, and sumac. You get a little tart from the molasses and a little sour from the sumac. Not too much, just enough. It helps to balance the kick from onion and spice from the arugula. This salad will keep you coming for more. Every time I take it somewhere people go crazy for it. Recipe Tips:
I personally like my dressings super lemony and tart. This ratio might not work for you. Feel free to play around with the ratios of oil, lemon juice, and Pomegranate Molasses. Everyone likes their salad a little different so feel free to adjust to your liking!
